Master Roasters combine the science of heat and time with the art of experience and instinct. . The degree of roasting is intensely personal. Some people prefer a lighter bodied bean, which brings out the unique characteristics of the bean's origin (eg, Kenya, Java, Jamaica). Others prefer a darker roast where the beans character is dominated by the roast flavour. “Full City” is considered by many to be a great degree of roast as it is neither too light or too dark.
